Wilderness Trail Rye SBP Single Barrel 5 Year 1 Month

This rye barrel that we chose was a little over 5 years old and it spoke to us amongst a large lineup. It is made from a mashbill of 56% rye, 33% corn and 11% malted barley aged in char #4 barrels from Independent Stave. The whiskey is a light amber in color with a nose that opens with baking spice, wood shavings, rye and gingerbread, with rich and almost fruity aromas with hints of date and raisins emerging with air. On the first sip we noticed gingerbread, marzipan and nougat notes along with pepper, clove and tobacco. It finishes smoothly with just the right amount of pink peppercorn and the slightest bit of szechuan spice to remind you it’s a Rye. While this delicious Rye can easily be enjoyed at cask strength, a bit of water brings out a richer almost caramel element and even a bread pudding flavor. It really shows off the technical perfection of the sweet mash process Wilderness Trail uses and the delicious and complex flavors they can achieve in just five years.
