Sauternes finishing is an unusual pairing for a peated malt: Sauternes is a French sweet white wine from Bordeaux, and the residual honeyed sweetness and stone fruit character of the Sauternes cask creates an unexpected tension with the smoke — softening the peat rather than complementing it with red fruit as sherry does, or amplifying it as some other cask types would.
