Highland Park is the most northerly whisky distillery on mainland Scotland, situated in Kirkwall on Orkney's main island. The distillery's distinctive character comes from its use of locally sourced Hobbister Moor heather peat — producing an aromatic, floral smoke fundamentally different from the coastal medicinal peat of Islay distilleries — combined with first-fill sherry cask maturation and the maritime influence of Orkney's coastal warehouses. Highland Park uses heather peat from Hobbister Moor on Orkney rather than the coastal peat used by Islay distilleries. Heather peat produces a more aromatic, floral, and perfumed smoke character — gentler and more complex than the coastal medicinal iodine character of southern Islay. The difference is immediately apparent when comparing the two.
At 63.6% ABV the expression is intense — a few drops of water are recommended for most drinkers. Water softens the proof and opens up more vanilla sweetness, creamy marshmallow, and dark fruit while calming the peppery heat.
