• Limited edition peated straight American whiskey produced by Chattanooga Whiskey in Chattanooga, Tennessee • The sixth release in the Chattanooga Whiskey Barrel Finishing Series • A blend of 3 peated straight American whiskeys (marques B004, R19072, and B033) • B004(75% of the blend): distilled from a mash bill of 74% non-GMO yellow dent corn from Catesa Farms in Riddleton, Tennessee; 16% peated malted barley (peated 20–35 ppm) from Simpsons Malt, Berwick-Upon-Tweed, UK; 6% naked malted oats from the UK; and 4% honey malted barley from the US • R19072(17% of the blend): distilled from a mash bill of 100% peated malted barley (peated 35–45 ppm) from Bairds Malt (various locations in the UK) • B033(8% of the blend): distilled from a mash bill of 59% non-GMO yellow dent corn from Catesa Farms in Riddleton, Tennessee; 24% peated malted barley from three UK sources including Bairds, peated 35–45 ppm, Fawcett, peated 15–25 ppm, and Simpsons, peated 20–35 ppm; 12% honey malted barley from the US; and 5% malted rye from Canada • Temperature-controlled, open-top fermented for 7 days; bourbon mash bills receive a yeast strain typically used for single malt whiskey; malt whiskey receives a yeast strain typically used for bourbon • B0004 and R19072 are distilled in a 30-foot high, 18-plate Vendome column still and custom Vendome copper doubler; B033 is distilled in a 100-gallon, 4-plate Vendome copper hybrid pot still (known affectionately as “Doc”) • Aged for more than 5 years in 50% char #4 and 50% char #3 barrels (53-gallon) with a custom toast from Independent Stave Company; finished for 6 months in refill casks sourced from Islay’s 3 “Kildalton Cross distilleries”: Ardbeg, Laguvulin, and Laphroaig • Non-age statement • Alluring notes of fresh orchard fruit and white flowers on the nose—along with graham cracker, dried apple, chocolate mint, and toasty barrel—are woven into layers of smoke; the palate is broad and satisfying, offering notes of BBQ pit, cigar ash, and fireplace ember as well as pillowy butterscotch, punctuated by modest spice and heat on the finish • Small batch of 7–9 barrels • Non-chill filtered; 55.5% ABV Chattanooga Whiskey’s mantra of layering flavors produced from high malt mash bills is cranked to eleven in this sixth release of their limited edition Barrel Finishing Series. Three peated mash bills—containing malts peated to three different levels—are distilled on a combination of stills and finished in three types of Islay Scotch whisky casks. That said, Chattanooga’s deft whiskey-making craft has never been more evident: Elegant and nuanced, the satisfying smoke arrives less by blunt force than in lovely, expanding waves, making this truly a whiskey lover’s campfire whiskey.
