• Distilled from 100% organic, estate-grown Williams pears (aka Bartlett pear) sourced from the Reisetbauer family farm
• Pears are hand-harvested underripe, ripe, and overripe, stored for 2 days to ripen further, then mashed and fermented between 16-17 °C (60–63 °F) for 8–10 days in stainless steel
• Distilled twice in a Christian Carl copper pot still
• Rested for a minimum of 3 years in stainless steel

August and September harvests from Reisetbauer’s own organic-certified grove of nearly 17,000 Williams pear trees ensure optimal ripeness for fermentation.
