Commercial Description:
This comes from a young orchard of low branch trees with high planting density. The soils are flint and clay over chalk. He uses over 12 varieties of apples, with a blend of 40% bittersweet, 35% bitter and 25% sharp to attain a wonderful balance of juicy sweet apple, sharp acidity and apple skin tannin.
Color
Bright honey yellow, orange and golden highlights
Nose
The nose is marked by bittersweet apples. The bitter and sweet notes of yellow and red apples are on the same level. Freshly squeezed apple juice comes straight to mind. Totally sparkling. The glass also reveals ripe quince and baked apples with almond paste. Beeswax and green walnuts are quietly heard in the background. Rustic in the good sense of the word.
Palate
On the palate, it is skillful and juicy. Hardiness is taken to a new and perfect level. The fruit is clearly recognizable and has a tart and sweet presence. With a fine tannin, La Folletière provides tension and spices. At the end of the mouth, it appears dry in terms of taste. The juiciness is already enormous with gentle use of acidity. Very balanced. There is almost something of the pleasure of Riesling Kabinett. Best enjoyed without moderation.
